KFC Goes Healthy

Kentucky Fried Chicken says it will reduce the trans fatty acids in its fried foods by switching to oil from low-linolenic soybeans. Jerry Steiner, executive vice president of Monsanto, reports that many food companies are using Monsanto's Vistive brand low-linolenic soybeans to reduce the trans fats. “Demand for this type of oil continues to outstrip supply,” he states.

Vistive soybeans currently are grown in Iowa, Indiana, Michigan, Minnesota and Nebraska, and Monsanto is expanding acreage to include Ohio and Maryland in 2007.
